Apple and Walnut Rice Kugel

What to do with that left over rice? Don't get rid of it. By making a simple mixture with apples, dates, and walnuts you turn that boring left over rice into a delicious dessert or breakfast dish.

Apple and Walnut Rice Kugel

Ingredients

  • 2 medium (325 g) apples, cored, quartered
  • 1 cup (100 g) walnuts
  • 1 (50 g) lemon, peeled
  • 6 eggs
  • 2 Tablespoons (30 ml) honey, plus extra
  • 6 (100 g) dates, pitted
  • 1 stick cinnamon (or 1 teaspoon ground cinnamon)
  • 3 cups (475 g) cooked jasmine rice, cooled

Directions

  1. Preheat oven to 350°F (175°C). Spray a 9 x 9-inch square baking dish with non-stick spray and set aside.
  2. Fit the Food Processor with the Multi-Use Blade. Place apples, lemon, and walnuts into the Vitamix container and secure the lid. Pulse 6–8 times or until evenly chopped. Remove to medium bowl.
  3. Place eggs, dates, honey, and cinnamon into the Vitamix blending container and secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 45 seconds using the tamper to press ingredients toward the blades.
  4. Mix into the bowl with the chopped ingredients, and rice. Pour mixture into prepared dish and spread evenly. Drizzle a little honey on top. Place in preheated oven and bake for 45-60 minutes or until set through and golden brown on top.

Chef's Notes

  • This dish makes a great brunch entrée or side dish. It even works as a dessert — just top with some seasonal sorbet.
  • This is an incredibly versatile dish, allowing you to use what you have on hand to make a delicious dish. If you don't have apples, try peaches or pears. Don't have walnuts? Try with almonds or pecans.
  • Want to make it vegan? Swap out the eggs for flax "eggs" and the honey for maple syrup. To make flax egg mix 1/2 cup (85g) flax meal with 2/3 cup (180ml) water. In the end you'll have a nutrient dense meal loaded with protein, healthy fats, and fiber. It's great for you and helps reduce food waste, so it's a win for the environment too!
