Tomatillo Verde Salsa

Made with tomatillos, scallions, and jalapeño, this authentic, Mexican salsa verde has fabulous flavor.

Tomatillo Verde Salsa

Ingredients

  • 2 cups (550 g) stewed tomatillos
  • 2 (10 g) scallions, roots trimmed
  • ¼ (5 g) jalapeño, seeded
  • 1 garlic clove, peeled
  • ¼ lime, peeled
  • ½ cup (10 g) fresh cilantro leaves
  • ½ teaspoon salt, optional

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 60 seconds, using the tamper to push ingredients toward the blades.

Chef's Notes

  • For a spicier dip, use a whole jalapeno and keep the seeds in.
  • This salsa can be used as a standalone dip, or as an accompaniment to vegetables or meats.
  • In this picture we have accompanied the salsa with a smoked white fish.
