Lychee Frozen Cocktail
Empress Gin gives this cocktail a magical change of color for a beverage that's as visually exciting as it is delicious.
Ingredients
- ½ can (130 g) lychees, with syrup
- 1 lemon, peeled
- 1 Tablespoon honey
- 2 cups (260 g) ice cubes
- 4 fl.oz (120 ml) Empress 1908 gin [or herbal tea], divided
Directions
- Place all ingredients except gin into the Vitamix container in the order listed and secure the lid.
- Run the Frozen Cocktail Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 45–55 seconds, using the tamper to push ingredients toward the blades. Pour slushy into two glasses and top each glass with 2 ounces of gin.
Chef's Notes
- Empress gin is made with butterfly tea which reacts to acidity and changes from its dark purple color to a pinkish hue. This is a great to do in front of your guests to show off!
