Homemade Flavored Butters
Using flavored butter is one of the quickest, easiest, and most delicious ways to transform your homemade meals from business-as-usual to restaurant-quality. With a little creativity and a Vitamix machine, you can add an artisanal touch to the simplest of foods.
Incorporate a variety of seasonal herbs such as basil, chives, rosemary and cilantro to make butter that’s perfect for tossing with hot pasta and vegetables or drizzling on grilled meats. Sweet ingredients like honey, molasses, and cinnamon are great for making butter you can spread on warm breakfast breads.
To make butter in your Vitamix machine, simply blend heavy whipping cream at a high variable speed until the mixture becomes thick. Continue blending in five-second intervals at a lower speed, scraping contents off the sides of the container between blends. Repeat this process until you’ve achieved the right spreadable consistency and fluid appears. Drain excess fluid and store the butter in an airtight container.

rosemary, basil, chives, cilantro, dill, sage, lemongrass, lemon thyme, lavender
Sun-dried tomatoes, olives, capers, peppadew peppers, horseradish
Honey, molasses, maple syrup, figs, prunes, raisins, dates, dried pineapple, mango, or apricot
Cinnamon, nutmeg, allspice, garam masala (a sweet, exotic blend of traditional Indian spices)
