Heart Healthy Cheesecake - The Inside Scoop
It's true. You don't usually see "healthy" and "cheesecake" in the same sentence, but leave it to Vitamix to find a way. Tofu and cottage cheese team up for a terrific texture without the high fat feature. Using only egg whites cuts cholesterol. The Vitamix machine blends the ingredients to a silky-smooth consistency. The result is low in fat and high on healthy.
Then we come to the raspberry coulis. It's red. It's delicious. And this amazingly smooth raspberry sauce is what Vitamix processing is all about. Only the Vitamix can liquefy raspberries, seeds and all, into a rich, velvety sauce. And the bonus is more than incredible taste. Raspberry seeds normally pass through the body undigested, but they are loaded with ellagic acid, noted for its potent cancer preventive properties. Vitamix processing releases all the valuable nutrition from this amazing little fruit, recently reclassified as a "fruitaceutical", by a team of researchers at Ohio State University Comprehensive Cancer Center.
Ingredients
- 12.3oz Extra Firm Tofu
- 16oz (2 cups) Cottage Cheese
(1 ½ % milk fat)
- 2/3 cup Sugar
- 2 T Lemon Juice
- 2 T Corn Starch
- Pinch Salt
- 4 Egg Whites
- 3 T Graham Cracker Crumbs
- 12 oz Raspberries, thawed or fresh
- 1/4 cup Sugar (or other sweetener, to taste)
Directions
Preheat oven to 350º.
Spray bottom and sides of a 9" spring form pan with non-stick spray. Combine tofu, cottage cheese, sugar, lemon juice, corn starch, salt and egg whites in the Vitamix Wet Blade container.
Start on variable speed # 1, quickly increase the dial to speed # 10, then flip the switch up to High Speed for 1 minute.
While the Vitamix is running, sprinkle the graham cracker crumbs evenly on the bottom of the pan.
Slowly pour blended ingredients into the pan.
Bake on the middle rack at 350º for 1 hour.
Raspberry Coulis
Add raspberries and sugar into Wet Blade container.
Start on variable speed #1, quickly increase the dial to speed #10, then flip the switch to High Speed for 3 minutes.
Serve warm or chilled.
